INGREDIENTS
Dressing
- 3 tbsp soy sauce
- 3 tbsp rice wine vinegar
- 1 tsp sugar
- 1 tsp chili oil
- 1 tsp toasted sesame oil
- 1 clove garlic, finely minced
Salad
- 12 oz small cucumbers
- 1/3 cup roasted peanuts
- Fresh cilantro leaves
- Red chili flakes to taste
DIRECTIONS
- Whisk all dressing ingredients together.
- Finely grind the peanuts (you can use a food processor, rolling pin, meat tenderizer, or something similar) until you get your desired consistency. You want them to be very fine but not dust.
- Thinly slice the cucumbers diagonally.
